The Wine
Mouthwatering white Burgundy from the sleepy vineyards of Saint Romain. Back in 1983, Pascal Prunier-Bonheur became the fifth generation to take the helm of his family estate, which now comprises eight hectares, with plots in Meursault, Pommard and, of course, Saint Romain. Pascal believes that good wine begins in the vineyard and practises minimal intervention, preferring to use natural methods of pest and weed control. Harvesting is done by hand, and after the grapes are gently pressed the free run juice is fermented – half in stainless steel tanks and half in French oak. This gives the wonderful combination of freshness and complexity, a hallmark of Pascal’s wines. Fresh, clean and lively, try it with sauced fish or creamy cheeses.
