Although grown here for 1,000 years, local speciality Verdejo is only now coming to the fore internationally thanks to modern know-how – early morning harvesting and the ‘blanketing’ of grapes with inert gas straight after picking to protect them from the ravages of heat and oxidation. Full marks to local supremos the Sanz family, who combine six generations of tradition with state of the art technology. Palacio’s breezy, citrus and apricot freshness makes it the perfect apéritif or partner to fish or white meats.
