The Wine
This luscious white is the result of a time when Tony Laithwaite worked with Danish winemaker Peter Vinding Diers. Peter was renowned for transforming the face of white Graves in the 1980s. He and Tony made a superb, dry, botrytised Sémillon and it was Tony’s retelling of this that inspired Chai winemaker Jean-Marc Sauboua to try his hand. Two thirds of the grapes are from a special lieu-dit in the Entre Deux Mers. The rest is late harvested, botrytised Sémillon from Bordeaux’s renowned Loupiac region. This portion had the full works – fermentation in part new barrels, with 5 months' ageing on its lees in oak, but still the oak is subtle. With a gentle toasty note and real lemony zing, this white is tops with pork belly or with salmon.
