The Wine
Château Doisy Védrines has been in the Castéja family since 1840 and is today run by Pierre Castéja. Pierre maintains exceptionally high standards at the cellar and will declassify a whole vintage if he believes the wines won’t be up to Grand Vin standard. Batches of grapes are fermented separately in oak barriques and then left to mature. After a year, each vat is tested to see if it is worthy of inclusion in the Grand Vin. 2010 was an excellent vintage in Sauternes with weather in October perfect for encouraging botrytis – the condition essential for producing the world’s finest dessert wines. Enjoy with fruity summer puddings such as strawberry tart served with crème anglaise or, traditionally, with blue cheeses or foie gras.
