The Wine
The most famous of the northern Rhône appellations, Hermitage produces tiny quantities of serious, long-lived reds made purely from Syrah. The whole region covers just 126 hectares (about the size of a large Bordeaux estate). We secured a great deal on a few barrels from a top cellar and transferred them to Le Chai au Quai. The wine had already spent 10 months in oak but maestro winemaker Jean-Marc Sauboua expertly finished it for 4 months in top of the range French barrels. As part of the agreement we changed the name of the wine to protect the estate’s reputation – but open a bottle with friends who appreciate great wine and you can be in no doubt of its true pedigree. The perfect partner for venison stew or confit de canard.
